Curious here... isthere a way to see a categories age?

Also, if there are 100 submissions to Cat1, and in during reviews Cat1-SubCat1 is created, are the reviewers able throw the submissions that were in before the new sub-category, into the new sub-category? Clear as mud? :)

At the bottom of the page there is a date when modifications to the category have taken place, but this is not conclusive for when it was last edited nor does it indicate when it was created (Not sure which you meant)

Yes when the new sub category is created (in most cases due to sites awaiting in the higher cat needing a sub-cat home) the editor is able to easily forward those to the new category just as they would forward improperly suggested sites to their correct sites even if it is for areas of the directory where that editor doesn't edit or have permissions.

More generally: an editor can move ANY submittal or submit any site whether ever submitted or not, to ANY category. (Submitting a site doesn't constrain or force an editor.) And many, perhaps most, submittals are moved by editors before receiving a final review for a listing.
