I submitted greenbankcabins.com to this category back in January.:
http://www.dmoz.org/Regional/North_America/United_States/West_Virginia/Counties/Pocahontas/Travel_and_Tourism/Lodging/

Is it possible that there is no editor for that category since there's no listings in that category? Cause you'd think if there's not many "on the waiting list" for that category, it shouldn't take so long to get listed.

No category is without an editor. Any editor listed in categories above a particular subcat can edit there, in addition to the Editalls and Metas who can edit everywhere. However, by the same token, an editor at a higher level "sees" many subcategories with many submissions. Although there may be only one site waiting in a particular category, there is no way to say whether the wait will be long or short - same as everywhere else.
