How do I know who the editor is for a certain category?

Any editor named at the bottom of the category, and any editor in all of the categories above that category [all the way to the top] may edit there - in addition to a large number of unnamed editors who can edit anywhere.

You don't.

If there is an editor name on the category, then that editor might be currently editing the category. Any editor named at any higher level category can edit all sub categories, additionally there are editors that can edit anywhere, anytime.

Knowing will not tell you anything, nor will it enable you to speed up individual site listings.

If you need to know something about a site there are forums here for that purpose, choose the appropriate one, and read the instructions before posting.
