The editors here are volunteers and work where and when they like within the confines of their permissions. No work is scheduled and hence there is no way to predict when somebody might process your submission. Elapsed times vary from a day or so out to a year or so.

Either your site is unlistable, in which case there's no point in resuggesting it or it's still awaiting review, in which case there's no point in resuggesting it.

Later submissions overwrite earlier ones and in some circumstances, resubmissions can be counter-productive. I suggest that you stop it.

Unless you have reson to believe that all of your claimed 12 submissions have been lost, no.

Could I submit to other categories in the mean time
You've already submitted your website to the one best category. If you additionally submit it to elsewhere, the reviewing editor is quite likely to send it to the one best category for further review.

Short answer: Best not unless the website has radically changed focus.
