You're in a pool of sites awaiting review, yes. There is no queue as such, in that the sites can be reviewed in any order.
One additional question, I noticed that there was a link at the bottom of this category that says, "Volunteer to edit this category", does this mean there isn’t currently an editor? If that is the case, does this mean that although I am in a group of sites to be reviewed for this category that there isn’t anyone to review them?

Between two days and two years. As we have explained in the past, the editors are all volunteers and there is no way to schedule or determine when a given category or site will receive the attention of an editor.
