Not yet in directory but stats say we are.

I've just looked at my stats page for my site and can see that I have an external link from DMOZ, but when I browse or search for my site in the directory it's not there. Why is this?

We don't know. It might have been an editor looking at it or it might have been a robot. You can't draw any conclusions from a hit in your logs - other than that we've heard of your website.
