It's unlikely that you were denied because of a conflict of interest. Many editors can edit in categories where their own sites are listed, or could be listed.

What is more likely is that the size of the category (and the number of unreviewed) is too large for us to let a new editor loose on.

If you have interest in really becoming an editor, and giving something back, a good place to start is in the regional tree in the locality where you live (everyone lives somewhere, right?) If that category is large pick a subcategory of it.

Thanks Alucard - I might just do that. I believe my actual town has an editor (they did last month), but I may be able to find a nearby city to get myself started in this.

I had just assumed the reason was conflict of interest, kind of makes me feel better that it might not have been. I didn't think that it should have been an issue, but I couldn't think of any other reason as to why I wouldn't have gotten the position.
